Margarita Ice Cream


Some things in life are just so addictive: Chocolate cake, trips to the beach, shopping with a friend, watching Will and Grace dvd's (ok, that is a personal favorite, but still...) and ice cream in the summer. If you do not have any plans this weekend, just make one, and give this Margarita Ice Cream a try. I promise it will be a hit if you are having a Father's Day party or even just feel like keeping cool over the weekend. The tart yet creamy flavor will keep you coming back for just one more (or two!) scoop. It does have a bit of alcohol so if you are wary of serving it to the kids, then you might want to serve them a pint of something a little more tame, but I admit freely that after 2 scoops, I was nowhere neareven slightly buzzed.
Don't have an ice cream maker? No problem, as you do not even need one with this recipe, but do make sure you give it overnight to freeze up properly. I mean, if you DO have one, by all means give it a whirl.

Speaking of Father's Day, I wish all the Dad's out there a special day. With much gratitude and love to my own Dad: May your day be as wonderful as you are. You taught me patience and to never sweat the small stuff...and the love of a good book. I adore you.
Happy day to my husband who is taking us all away on vacation for his Father's day. You give everything to our children (and me!): Time, patience, comfort and infinite love. Abundant love and endless gratitude to you from all of us every day.

Margarita Ice Cream

1/3 cup lime juice
*The recipe calls for 1/2 but I added in a bit of lime zest instead of the full amount
2 tablespoons tequila
3 tablespoons orange liqueur
1 1/4 cups powdered sugar
2 cups heavy cream

Pour everything but the cream into a bowl of a mixer fitted with the whisk attachment, then stir in the sugar to dissolve.

Slowly add in the cream and then softly whip until smooth. Do not beat until stiff, though. At this point I added in a bit of lime zest from about half of the lime.

Transfer the mixture into an airtight container and freeze, preferably overnight, or if you have your ice cream make ready, pour in the mixture and mix to manufacturer's directions.

I love this ice-cream, the first time I made it I went into a Pub with a small bottle and asked for a measure of Tiquila in it - the bar man thought I was crazy!!!

My local foodies and I were thinking of a good ice cream to make with liquid nitrogen. We haven't tried any alcohol based ice cream yet. Margarita looks pretty cool to make.

This is such a unique flavor of ice cream -- I love it! And I love how I don't need to go hunting for my ice cream maker (which has been sitting in the basement all winter) to make this. Definitely a win-win recipe! ;)

This is such a smart recipe. I think the alcohol lowers the freezing point, so when combined with the cream, it stays soft. This ice cream looks quite addictive.
